Update on cherry wood stave experiment. Didn't make that big of a difference. Wood stave batch was slightly darker and slightly richer flavor but overall not worth it. I only aged for 2 months, so maybe it would have made a difference if aged longer or in an actual barrel.
Update on Omega Yeast. I got the Omega OYl-701 Sundew Ale and it's far and away better than the EC-1118 I've always used. The Omega yeast batch is much smoother and more balanced than the other yeast. I'll probably only use Omega yeast going forward. Only downside is that it's a liquid yeast which makes shipping a little more difficult, have to keep it refrigerated and only has a 6 month shelf-life.
