Looking for any ideas or recipes for new things to brew. I've gotten the basics down, using different yeasts to produce different flavors at various speeds and potentencies. But I'm looking to start getting into making things that taste good - not just get ya lit.
An example (I wouldn't advise):
1 gal: water
4 cups: sugar
1 tsp: yeast
While that will produce alcohol, you might have a hard time stomaching the Kilju (sugar wine) it makes. (Especially if you haven't syphoned the alcohol off the top after some "settling time" and filtered or distilled it)
What are some of your favorite ingredients to brew with? So far for me, it's basically white sugar and whatever fruits I boil in the water. But open to hearing what others have tried and gving new brews a shot.

Got a 'Vikings Blood' aging. Tastes like a stronger cherry wine.
1 gal: water
3 lbs honey
1 16oz package of frozen cherries (dethaw the cherries before brewing or they will kill your yeast)
1 yeast packet, I used EC-1118
Brew for a month, then bottle and age for another month or more before drinking.
I'm experimenting bottling some with a cherry wood stave, then comparing both.

Just a note on the EC-1118 yeast, it's a champagne yeast, meant for quick brews and high alcohol content(15%+ ABV). It chews through sugar fast and some say can strip out flavor.
It's the only yeast I've ever used so far but I probably wouldn't recommend it going forward.

That sounds pretty good. I need to order some champagne yeast. I went straight from beer brewers yeast (low alcohol, great taste) to turbo yeast (high alcohol, but tastes incredibly bad).
With the basics down for me, it sounds like EC-1118 might be a nice next step. The cherry and honey flavors sound great too. Will give it a try.
Update on the flavor differences if you get a chance. Be interested to see how it all turns out.
