Easy Instant Pot Chicken and Rice with broccoli (and cheese!)

1 1/2 cups chicken broth
1 cup uncooked long-grain white rice
1/2 tsp salt
1/4 tsp pepper
1 1/2 lb bonless, skinless chicken thighs (these are best bc they won't dry out in the time it takes the rice to cook, but feel free to substitute chicken breast.  Just beware the chicken might be dry)
1 cup shredded sharp cheddar

1. Spray 6 qt instant pot insert with cooking spray.  Mix borth, rice, S&P in insert.
2. Stir in chickent and broccoli.  Secure lid, set pressure valve to "sealing".  Select "manual", and cook on high pressure for 10 minutes. Select "cancel" and set presure valve to "venting" to quick-releast pressure. (I did natural release and it was fine).
3. Stir in cheese.  Broccoli will break down when stirring.
