If you like salsa on game day, you probably enjoy some fresh pico de gallo from time to time too. Here's a recipe that might be able to help you out with your tailgate or give you something to munch on in the living room.
Ingredients:
Instructions:
1. Dice up equal quantities of onion and tomato - use your personal taste on size. Roughly chop the cilantro.
2. Now, slice a couple jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membrane from the peppers.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don't want to cause any anyone to get a big chunk and start a mouth fire. Now combine all four ingredients into a bowl.
3. Slice the lime in half and squeeze the juice from one half a lime over the bowl. When I say, "over," I mean into the pico you've made. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapeno if needed. Voila!

- 12 Roma tomatoes (slightly under ripe is fine
- 2 cups fresh cilantro leaves
- 2 to 3 jalapenos
- 1 lime
